I hope you had a great Christmas with family and friends? Here in New Zealand we mix up the traditions of our English heritage with being in the middle of summer... which means we have hot food on a hot summers day! (Crazy I know).

Classic New Zealand Kiwi Recipe
Classic scones
2 cups self-raising flour
1 tsp baking powder
25g (0.89 oz) cold butter
½ cup cream 
½ cup water
2 tbsp milk
1. Preheat oven to 220°C (428°F). Sift flour and baking powder in a bowl. Grate butter into the flour and quickly rub with fingertips until the mixture resembles coarse breadcrumbs.
2. Make a well in the dry ingredients and pour in cream and water. Using a knife quickly mix to a soft dough. Turn dough out onto a lightly floured surface and gently roll into a rectangle.
3. Cut into nine pieces and place close together on a cold tray. Brush scones with milk and bake for 12 minutes until golden.
